    Whats the trick to keeping the skin from turning to leather when smoking them?

    Shouldn’t. 250 degrees for about 2.5 hours should be golden.

    250 is what I did. Sometimes it turns out great Sometimes it doesn't. Hell idk could be the chicken im buying. Or could be to close to the heat maybe?

    Brine, rub, Smoke 225-250, when done lightly brush with butter, place in broiler in bottom rack for a couple minutes but watch closely.

    Do you put them skin side down any? I've always cooked them skin side up and don't have that issue.

    275-300 skin down. Flip after 1 hr or hr 15.

    Dry them really good then hit them with a little oil, then rub and cook. If you know what you’re doing a quarter should never need a brine, that’s just a waste of water and salt.

    Cook temp on chicken should be closer to 300...there is nothing advantageous to slow cooking chicken parts. Skin will be chewy and meat will be dry. As mentioned above, wipe dry, use cooking oil/spray as a binder for your rub.

    To crisp the skin , turn up the heat high for 5- 10 minutes and watch to make sure they don't get scorched.
