    Default Whole Hoggin

I had the great honor of catering for my former firehouse last night. Whitefield Volunteer Fire Dept. celebrated 50 years of voluntarily serving their community last night. They wanted something special and I just happen to specialize in whole hoggery. 238 pound Greenbrier farms Berkshire whole hog. It was a dandy! The coolest part for me? The whole hog of course but also that the original Fire Engine that started the FD 50 years ago made a surprise appearance so obligatory photos took place.

Sweet! I remember when that WAS the engine. Good stuff right there. If I’d known I would have swung by and got some pig

It was a beast for sure. Luckily I have some good help that comes together for these bigger hogs.

A lot of hard work went into starting that station back in the day. Lots of fried chicken Saturday fund raisers and a bunch of hard working folks as well as a generous neighbor who donated the land to start the station.

Bigger the hog the more fat. I've only cooked 2 but the larger one was much better. I think around 220lbs
