    I've got some fresh Wahoo and looking for new methods. I usually just fry it and wondered if I'm missing out on some good methods. I know it ain't rocket surgery, but sometimes asking these questions turns me on to stuff I never thought of.

    raw, roll sushi or melt butter in a cast iron pan and roll wahoo chunks in lemon pepper, sear until med/med well and serve hot!

    One of those things you can go super simple on

    Steaks
    -season with whatever you want
    -top with garlic and butter
    -wrap in foil
    - grill

    Mix garlic / Parmesan / parsley into paste.... open foil and slather paste on it for last 2 ish minutes

    Definitely raw or grill. I like to mix mayo, soy, butter and garlic, brush on both sides and put on a very hot grill.

    Dukes mayo then roll in corn flakes. Sounds nasty but damn good

    Put a little old bay or blackening seasoning on it it, roll in tuxedo sesame seeds. Very quick sear in a hot pan. Slice thin, refrigerate and enjoy with soy sauce and wasabi. . Works great on dolphin and tuna too.

    I had it once with a mayonnaise cheese mixture on top then grilled. It was amazing but I cannot for the life of me remember how to prepare it

    I did some the other night with light coating of dukes. Sprinkled old bay on it. Then coated in Parmesan cheese. Baked in oven for 20 minutes at 350. Finished it off with a high broil to brown top. The whole family crushed it

    Other than raw, grill add some butter on top, salt and don't overcook

    Butter, salt, pepper, hot cast iron for just a bit, cook it like tuna.

    My almost two year old likes it cooked this way.

    I usually eat it pretty rare but for her I cook it more.

    It's easy to overcook and it's not as good when that happens.
