    Thanks...keep'em coming. Right now, after reading all this, I'm thinking sushi rolls with wasabi and a soy marinade.

    Sear coated with sesame seeds.

    Separate pan with mirin and soy. Reduce and pour over sliced fish.

    Best Ono I ever ate was off Kona. We cut hunks off it and devoured it like skinny hippies.

    That night, the remainder got seared with salt/pepper , put onto corn tortillas with slices of Avocado, some chopped napa cabbage, pickled red onions, some diced pineapple /tomatillo salsa and crumbled cojito cheese. Squeeze of lime and down the hatch.

    Damn good fish.

    A little mayo, shredded cheese and lemon juice on a wahoo is a damn fine meal.

    I used the last bag of almost year old vacuum sealed wahoo recently in Hank Shaw's African fish stew recipe. Similar to a Pee Dee fish stew but with curry. Wahoo holds together much better than catfish. Good way to use up frozen fish.
