I'd go to my granny and pappa's and they'd be boiling a pigs head in the pressure cooker. Making hog's head cheese. I remember faintly the family would get together and have a pig killin. It was a big time. Nothing went to waste. Each person had a job. Kids got to pull the hair and fetch stuff. I remember my granny's was turning the intestines inside out and scrubbing them to make sausage casings.

I've eaten all of it except chitlins. I refuse. That smell, oh sweet Jesus the smell...

We did the same every January another family would raise a hog too and we killed both at the same time. We took the skin for karcklens (cornbread and trapping bait) and they kept the heads. I still would not eat the chitlins or organs. Fatback is too salty for my taste along with country ham.

It is interesting now rendered hog lard is healthy again.

I don't miss planting picking and canning vegetables but glad to have the skill of needed.

Meatloaf is tolerable but still a waste of a good hamburger. No meat should required ketchup to cook.

I ate a boar hog I killed on public land many years ago. It had a strong smell while being cooked and a funny taste, too [shock!]. I even ate the ribs, which were so large I felt like a character from The Green Inferno or Cannibal Holocaust.
