    I went fishing at Calcasieu Lake 10 years ago. Mom and Pop guiding outfit run out of their house with an addition for customers to stay in. Dudes old lady cooked for us the whole trip. She started cooking a gumbo for us at 5 AM once while she was cooking us breakfast. It sat all day while we fished and she dropped shrimp and crawfish tails in right before we ate. Have barely eaten it since cause it was heavenly and there's no comparison. Even for a talented gumbo cooking soccer playing dentite.

    If I were served two bowls of gumbo, one with instant roux and one slowcooked i probably couldn’t tell the difference to appreciate the slowcooked.

    As long as the end result is good and my stomachs full I usually couldn't care less about the preparation process as long as it’s clean

    Extra credit is given for the Magnalite . Those are highly prized. I bought mine 30 years ago in Sulphur, LA - cheap. '50s era Wagners. Stamped Magnalite on the bottom. The store had stacks of em. McWare is a Louisiana based company that makes good replicas.
