Best gumbo I ever ate was on a beach overlooking the Olympic Peninsula after a sporty duck slaughtering. No Cajuns or Coonazzes for many hundreds of miles.

Dungeness Crabs, Kumamoto Oysters that we shucked into the pot - liquor and all, some fresh salmon chunks and amazing shrimp that were swimming just before we lit the fire.

    Memorable.

If an instant roux is used do you compliment the chef or the factory that produced it?
