    Yall are correct in that the South American bunch eats well with minimal equipment. For about 10 years, I had 110 +/- Mexicans working for me in the woods and they always had outstanding lunches. That's when I learned that anything in a tortilla is a taco.
    Funny story...one Monday morning, none of my men from one crew showed up for work, and since all 10-15 of them lived in the same trailer, I figured I'd go see what was up. I got to the trailer and walked in to a smell that was beyond good, so I went to the oven which was holding something special. When I opened the oven, there was a goat's head staring back at me...eyeballs and all. Turns out, it was some Mexican holiday and they had been cooking and drinking since Friday evening.
    Crops are harvested, animals are killed.

    They definitely know how to party. There is a little joint in Charlotte called taco Nevado on central Ave. all they serve are tacos with any type of protein you can imagine. When you order there is a little old lady who looks like she is 100 years old who will roll out and press your tortillas right then and there. It is great. And if you ain't bilingual you better hope you're with someone who is.

    Theres a place in summerville i ate at that was like a restaurant/food truck. Its a little hole in the wall but damn the food is good. I cant remember the name of it. I believe it was tiki taco id have to ask Duckman he showed it to me. But its the best Mexican food I've had.

    My guys don’t have a microwave they have a little camp stoves.

    Mine used to just build a fire, but we were working in the woods.

    I noticed this. We had a crew come threw and cut all of our cedars out. There are little camp fires all over the place now
