    Default Test batch

Used a Penrose copy recipe, 4 jars for test. Venison jalapeño and cheddar snack sticks. Recipe says to wait a week, don't know if I'll be able to

Friend of mine recently pickled some summer sausage he’d made. I’m not sure I want to eat summer sausage that hasn’t been pickled now.

I thought I was the only person that ate penrose sausages.

Looks great, I always loved some Penrose. Then throw a few hard boiled eggs in after they are gone-great
    pickled eggs to boot.

Ice cold jar of penrose and a sleeve of soda crackers would do you right.

^^This^^ I sure wish they still made those sausages.

I made up a couple of jars of these today, along with a couple jars of eggs. We will see.

You guys that have made these before, how long do you let them sit before opening and sampling?

Its been a week, opened one and sampled, definitely has the Penrose flavor and texture, gonna give them another week to soak but damn good. Might have to make up another batch for some boiled eggs this week

Day 11 and they are great

I’ve had 1 or 2 a day since day 7 and they just keep getting better. Once I find where I like it I’m going to do a large batch.

A natty light would pair great with those

The ones I made turned out great too! Brought back lots of memories. The flavor is almost spot-on for the old Penrose ones.
