Local oyster shells don’t look as pretty, but they taste better than any gulf oyster I’ve ever had. Used small muffin pans in place of the shells for a Rockefeller that’s good. Sauté onion, garlic, and spinach in bacon grease or butter. Put a spoonful over 3-4 oysters, add Panko and Parmesan and bake. Delish and simple.
