    Default Oysters

    A friend brought me some fresh oysters by Friday-haven’t had truly fresh oysters in a long time. I had some Friday night and some tonight. Have a few left and was thinking about possibly cooking the rest someway tomorrow, what do you guys recommend. I see steamed, grilled, etc. recipes and wonder what you guys think is best. If nothing sounds good I’ll have the rest tomorrow, raw. Hard to beat that with a good cold beer.

    I myself prefer raw but sometimes when i want something different i like to make oysters Rockefeller.

    I like to make the shooters with horseradish, Texas Pete and lemon juice. I too will sometimes chase them with a ruffled lay

    We really enjoyed charbroiled oysters during our last trip to Louisiana.
    Note that this recipe does say it can be served with chips.

    I’m sure most of this crowd can make Oyster stew. If not, your scenario is perfect for a quick stew. Shuck them into a pot, (this next part is critical) trying to save as much of the liquor as possible. Add whole milk, salt, pepper and butter to taste. Maybe add a pinch of tony’s or old bay depending on preference. Simmer just enough to firm up the oysters and crush up a handful of ritz crackers. Make sure not to overcook the oysters. Stir that in and enjoy some finest eating you can get on a cold winter day.

    Horseradish cheese on the half shell, fried oyster po boys, seafood chowder, oyster pie, I could go on.

    Oyster pie good. Nitros oysters great. Those 2 are my favorite, but a steamed local oyster has its place up there too.

    Looks excellent. I wound up following EveryDays suggestion and made an oyster stew. It was great, but doesn’t look as good as these.

    Those Oysters were from TX during my trip over there. We had two quarts. The batch I fried were dusted in Adluh breader that I brought with me.

    IIRC, they were from Fabian Oysters . We ate the first quart of em raw on day one, Made a Seafood Gumbo with local Skrimps, Crabs and some Redfish one guy caught and added to the pot. Day two we made Rockefeller and on day 3 I fried the balance. Damn they were good.
