    Brisket was on time!
    I trimmed a few pounds of fat rubbed heavy with coarse S&P
    Cooked at 250 for five hours then wrapped in paper, it was @ 160 when wrapped
    I pulled it after another five hours (total cook time @ 10 hours) and it was @ 211 so a little overdone to when I planned to pull it
    I honestly wasn't expecting it to be done in under 5 hours otherwise I would have checked it sooner
    Stuck it in the cooler overnight and warmed it back up in the over
    Overall it was on time and there were no complaints!
