Thanks for the feedback. I was wondering how it turned out.
I got a meat grinder for Christmas and have a vertical sausage stuffer on the way. I'm thinking about using that same recipe to make some 1/2" snack sticks with zero fat added and smoking them.
Sausage making gets to be addictive. I've been making summer sausage and recently made some sage breakfast links that turned out good and now I am itching to try every recipe I can find on the WWW.
Update: The stuffer arrived!
