    Default Grits, shrimp and "shrimp head" gravy...

    I didn't plan to post this because it's a blury cell phone picture taken just to show the kids what they were missing...they didn't have "head on" shrimp for the gravy so I had to just use the shells. It does lose a little something without the head juice.

    I keep getting distracted by the butterfly plate.

    Do you just boil up the heads, reduce it down and thicken up for the gravy? Sounds really good.

    I grill the peeled shrimp in a foil pan with a 50/50 mix of teriyaki and white balsamic vinegar, salt, black pepper and some bay leaves. If I have the heads I'll put them with the pan with the shrimp. After the shrimp are cooked and removed, I'll squeeze the heads in the foil pan then use the juice to make gravy. I just use flour, cold water and a pretty good bit of black pepper to thicken the juice into a gravy. The vinegar makes it kind of like a sweet and sour flavor. I included the shells this time since I did't have heads but I don't think they add much flavor.

    The best way to use the shells is to put them in the grits water and let it boil for a minute or two then strain them out before adding the grits.

    Boo. I was hoping for a good dead shrimp picture. You owe me one now.

    When I think of my favorite pics from the 20 years of this site the first 2 that come to mind are a cooler of shrimp somebody had and a Spanish mack laying on the deck of that big green High Tide of BB's. The colors of both shots were amazing...

    Heck yeah! I love it almost ceviche style with some fresh lime and a bit of vinegar and onions. But those shrimp...Those look like good eats.
