I’m far from an expert but prop wash depending which way it rotates of wash from water coming down the underside would be my guess. If it’s not in clean water I don’t think it will pick it up at higher speeds
Is The transducer sitting lower than the boat?

Get a good map card and rely on that or add another unit with a in-hull transducer.
A map card is gonna help you more in most cases.
No expert either, but looks high to me.....that is some turbulent water in that location at speed...

That strake.
Try slowing down the ping speed when you’re running at higher speeds. I think that’s what it’s called.
I’ve always heard the starboard side is worse of the 2.
drop it down a 1/4 inch and try it
Mine doesn't work when doing much more than idle. Look into a high speed transducer

From my understanding it can make a huge difference. Whenever I’ve installed one and actually read the instructions it always says see which way prop roasted in neutral and put transducer on opposite side. It’s been a while since I’ve done one so it could be way different now
Try selecting a different transducer frequency. I've found mine works better on lower frequencies in salt water and higher frequencies in freshwater. (It might be the other way around). Also, some transducers have a scale for bottom hardness so you might try adjusting that too.
But, I agree about it being on the wrong side of the motor and maybe a little too high.

Nothing is wrong other than it’s a John boat. Mine will read up at running speed but not as clearly. Loosen the screws and lower it a bit and or slow down. It should hold the bottom read out pretty good up though about 30s or so except for turns.

Yep, as stated drop it down. If you can get the top of the transducer 1” below the boat, you won’t have a problem at any speed. At speed, there is no water behind the boat, thus it can’t identify the bottom....
