    Default Beautyberry Jelly

    It wasn't hard to collect and clean two cups of berries. It tastes like jelly...

    I wouldn’t have thought that you could eat those. The deer don’t seem to let them get big enough to make berries here.

    You ought to call it French Mulberry Preserves. That sounds more refined.

    I wouldn’t have thought that you could eat those. The deer don’t seem to let them get big enough to make berries here.

    I actually didn't either until I posted the photo on scducks then "googled" them. I found several recipes for jelly and a crazy guy on youtube that was eating them right off of the stalk...

    My chickens sure love the beauty berrys I have plenty around the house, maybe I need to try some jelly

    If it came out right, there's nothing to compare. I've gotten myself in a fix so now I have to make 20+ pints a year just to keep the family happy. Luckily, I found a ABB orchard on the deer property and can pick 12 cups of berries in less than an hour.



    I made three batches this size last year...only two this year because the mosquitoes were killing me...haha

    BTW - mine sets almost immediately after taking it off the heat. I boil 6 cups of berries in 8 cups of water then strain in cheesecloth. This usually makes 9 cups of liquid. For each 3 cups of liquid I use 4 1/2 cups of cheap white processed sugar and one packet of pectin then get it to a rolling boil for 1 minute - I've added lemon juice a time or two but can't tell if it makes a difference in how it sets or tastes.

    We make it every year. It is excellent! The berries on their own not so much!

    Rubbing the leaves on exposed skin is said by some to deter mosquitoes, though I have tried and didn't notice a benefit.

    I did not know those were called beauty berries, and I sure didn’t know they were edible. Awesome!

    It's pretty good. A lot like strawberry jelly. Mine is darker than rubberheads so I think next time more liquid and less simmer time but it's good like it is

    Grandson and I made a small batch of sugar free for the wife today. Guess we will see. Me and him are picking pears this afternoon to can tomorrow.
