Headed home from Hatteras with a bag full of filets. Need some ideas on how to fix em!
In a Ziploc mix 1/4-cup soy sauce, 2 cloves minced garlic, tablespoon lime juice, teaspoon sesame oil, tablespoon ground fresh ginger, teaspoon honey, tsp of rice wine vinegar.
Marinate the fillets for 3 to 4 hours. Take 4 tbs of mayo and add a teaspoon of Sriracha and mix well. Take the fillets out of the bag, brush on thin coating of mayo/Sriracha mix and grill or broil.
Eat them fresh or give away and instruct they been eaten fresh. If you can't eat them all fresh, you can still freeze and smoke them (I make smoked fish dip with them). You can always smoke first and then freeze the smoked fish as well.
I just use little olive oil and then add salt, pepper,cajun seasoning and grill
Squirt some lemon or lime juice on them while on the grill
Spanish fresh is very underrated!! Season to taste. Broil the shit out of it. One of my summer favs that I catch shit for.

I batter the skin in rice flour then fry it skin side down and eat it with a side of sushi rice.The wuhan tribesman pays top dollar for them if you know any.

Day fresh- lemon, capers, white wine, butter.
