    layer of tomatoes.. then a little cheese, salt, pepper, and basil, then another layer of tomatoes, and then cheese on top of that, mozzarella then a splash of cheddar. most of the time, there's a squirt of Dukes in there, sometimes with finely diced vidalias

    prebaked pie crust, making it any harder is silly

    ok, braintrust. Good responses, all.

    So the water runs AWAY from the salt? Gotcha
    and, yes, i often put the tomatoes on a rack on a cookie sheet. it doesnt seem to help.

    i've prebaked the tomatoes but it didnt help either, and gave the finished product a different taste/texture. again, not all bad.

    i agree on the "3 layers or less" mantra...and everything HS said. I like fresh basil....vidalia....pepperoni/....ground sausage. you name it and i've added it.

    and, yes, every one was good eating.

    I’m beginning to wonder if I should cut back on the tomatoes I put in. I’m also beginning to accept the fact that tomato pie is runny but still taste just as good.

    I think it's fully possible to accept a smidge of the runs, in a tomato pie.

    Word. But my wife is 31 weeks pregnant, ill about most everything I ask right now, and the mil happens to have them on the menu at her bakery this week so I got my order in. If you happen thru Manning at the right time, her's are hard to beat. And...better than my wife's, but I only say that because my wife will never read this. Although she'd probably have to admit it.

    Knock most of the pulp out when you cut them if you’re using watery tomatoes. Lay them out. Dry with paper towels. Cool the dang pie.

    Also, pimento cheese on top is a game changer.

    Cut them in half and squeeze juice out, slice and pat dry. And put Mayo in as a binder.

    Mix your shredded cheese with a little mayo and pimento cheese. Stir in some chopped onions as well.

    But still, nothing beats a home grown mater sammich on wonder bread.
