    Default tomato pie

    i dont know how to make a poll...

    i've made 537 tomato pies in my life. I have enjoyed every one of them.

    However, my family and I are looking at ways to make them less runny! Any tricks?

    I parbake the pie crust. I lay the tomatoes out on a drying rack. I've done everything i can think of....

    what say ye?

    Salt the tomatoes before putting them in the pie. It'll draw out some of the moisture.

    Yeah, kosher salt on top of the tomatoes for a half hour or so. Then grab some paper towels and dry them out real good.

    This....with course garlic salt. Both sides.

    Put them on a wire mesh bakers rack to dry out.

    And don't use the preformed frozen pie crusts.... Get the refrigerated ones that you roll out.

    Go buy you a box of Betty Crocker cake mix and follow the directions, but leave out the egg and see what happens.

    I don’t mind them runny, but it would be nice to have them slice all pretty like for when you have company. I’ve thought about pre cooking the tomatoes on a mesh rack in the oven, then adding them to the pie.

    Yep, this will do the trick. A friend's wife does this when following Southern Living's recipe, and her mater pie slices hold their form when cut. It's different but still good.

    2 -3 layers max. I like to put some grated cheese on the bottom as well.

    And like others say dry them out. Open the oven door for the last 10 mins.
