    My bride wanted brisket so brisket she got.

    Started out just a hair under 16 pounds before trimming.

    Kosher salt and course black pepper 1:1

    That one went 14 hrs. Wrapped it around 9 hrs in and then just let it rest on the grill. Pulled it off when grill temp got to 100.

    Egads, is that lighter fluid?!? Brisket sho' nuff looks good though.

    Right fine looking cutlery for an Auburn guy. I need to get y'all some pepper that's a little more coarse (Badia Butcher Block black pepper to be exact).

    Mine cooked probably an hour longer than it needed to, but it was still juicy. Today, it’s a little dry. Put on at 11 and pulled off at 6pm. 200F. Took the kids to the beach around 2 and forgot about it being on the smoker until kids started saying they were hungry.

    The lighter fluid is to get gum off my shoes. I start my Q fires by rubbing together the bones of the last person who sassed my cooking.
