Where in the hell can I find the bill of sale paperwork online or what is the easiest way to do this?

Is the person/dealer you are buying it from not providing a BOS? If they are, that should be sufficient enough to drive it back. You can make your own paper tag. I think you have 30-45 days to get all that squared away.

B-Stick- a "Bill of Sale" can be a handwritten piece of Paper as long as it has the Sale Price, VIN Number, Vehicle Description, both Parties Names and Addresses. One thing to know, most important is, coming from out of state to SC it really needs to be notarized in the place you execute the transaction. Not required but strongly suggested.
If the person you are buying it from has the Title, a "Bill of Sale" is on the back of the document. If they have it financed, your Lender and their Lender will work all of this out among them and his Lender should give you something to drive on. If he hands you the title signed and Bill of Sale Information complete on the reverse side, that's all you will need to drive.
Unless something has changed, and your insurance company should be able to tell you, but we used to be able to just take our current plates with us to drive the 'new/old' vehicle home. If you're not transferring the plates to the new vehicle, I guess you would just draw one up.
Edited... I didn't realize that the DMV offices were open, so as Mars Bluff says below, but if you need a BOS to get the tags, I guess you'd better call the DMV on how to get a temp tag.

Get the 45 tag from DMV before going to pick up. You CAN NOT drive veh in SC without a tag.
SCDMV online.
Google is your friend.
