    We hosted a thing down here Wednesday night for a group. Reps from different companies from all over the country were in attendance. The Alaskan Seafood Co. sent us a whole halibut and asked for it to be prepared that way...so we did. Cooked over wood and lump. It was stupid good.

    What was it's size? I have heard the bigger they get the less taste they have. I have eaten meat from a very large one and found it ordinary.
    That looks awesome, I have cooked big spottails and grouper like that.

    I had it in Maine last time I was up there. It was fried. I didn't care for it. I mean it tasted okay but seemed oily, which I don't like. Big chunks of white meat vs white and flakey. I would/will try it again but my first impression was only so so.

    It took about 45 minutes. The grill was rolling at 350-375 and we had a big sheet pan under it. The meat was fantastic. I was really surprised how well it came out. I have grilled whole b-liners and have poached large salmon but never anything like this.

    That looks awesome...

    When I was in Vancouver last year the nicer places would serve butter poached halibut cheeks... insane. Probably my favorite fish.

    I like to grill flounder. At a certain point during cooking, the top skin will peel off very easily. Then you can baste it with herbed butter and lemon juice and it gets into the meat well.
