I'd love to watch the flat bill crowd around here lose their shit if they were around one. We cooked one about a month ago and my oldest piled up a bowl from the pot and went to town, I was proud.

Fuzz do you add a few shots of your bbq to the hash to give it that authenticity? Lots of old folks that I grew up around did that and I do it too when making hash. We haven’t used a head in a good many years. The butts are convenient and have plenty enough fat to render down and flavor the pot. Also that little girl is growing up way too fast! Time rushes right on by!

I had hash last night at a meeting. not sure where it came from but it was mighty fine. it had the right texture. not too stringy, not too mushy. damn, I could fill my entire plate up with that stuff. some people went back to get banana pudding. I went back and got more hash and rice.

and if you live in the columbia area, I think that the place out on the sumter hwy has the best hash. smokehouse or whatever its called. its a lot like Sikes' used to be. plenty of liver, not too much butt, and lots of flavor.

I can still see the white porcelain pan with the blue flowers on it that my mom would make liver and onions in. I hated seeing that thing on the counter bc it meant we were having liver for dinner. I hated that shit!
