    Default WANTED: Venison Chili recipe

    I have a lot of venison hamburger and haven't ever made a pot of venison chili. I need all the help I can get if any of yuns have some good recipes. TIA.

    I will fess up to what i use, McCormiks chili seasoning kit. I use red and black chili beans

    I use 2 packs burger and 2 packs of seasoning and make a big pot.

    Works around here and my family likes it

    I use diced but ground will work.
    2lb deer meat
    One large onion diced
    2 green bell peppers diced
    2 jalapenos diced
    3 cloves garlic
    2 15oz cans diced tomatoes
    1 12oz can tomato paste
    2 tbsp Chili powder
    2.5 tsp ground cumin
    2 tsp Paprika
    1 tsp sugar
    1/2 tsp ground cumin
    1 can black beans

    Brown meat then add onion and peppers, garlic, all seasonings, saute. Add canned tomatoes, bring to slow boil the simmer for an hour or two. Add beans about half hour before eating.

    Interesting...I made a batch using 2 lbs and it was highly edible, but it needed some heat. Jalapenos I hadnt thought of! I will save this info for the next round. Thank you, Gentlemen.

    I use carroll shelbys chili kits available at most stores. Feel free to shame me all you want. Made a double batch this weekend for a hangout plus oysters and it is all gone.

    I pretty much do this without the black beans and sugar. I also cook the onions and garlic cloves together in butter with salt and pepper. I have pickled jalapenos to throw in as wanted.

    I mix in a pound of chorizo with mine. I also rehydrate dried chilies and make a purée instead of using chili powder.

    For heat, I use 2 TBSP of Chipotle powder and 3 cans of Rotel. A few deseeded and deveined fresh jalapenoes ( sliced) will get the heat factor up where most folks are comfortable eating it.

    The Carroll Shelby mix is legit - if you dont want to roll your own chili seasoning. Just leave out the packet of Masa Harina flour ( the white stuff)..

    We put a couple cans of Red Kidney and 2 cans of Pinto beans in our when someone wants beans in it. Most of the time, it's no beans.

    There's a recipe online i found called drunken deer chili. Calls for the normal ingredients and 2 beers and a couple shots or bourbon. It's pretty tasty

    That second dose of cumin may suppose to be coriander. Ill have to check when i get home if i remember.

    Problem with relying on store bought jalapenos for heat is sometimes they have none. My daughters are iffy on heat depending on if they want to show off that night or not. So I add to my own bowl.

    I made OTT chili yesterday on the Egg. Pound of onion venison and a pound of hot sausage venison rolled into a ball seasoned to your liking. Placed on a rack over the dutch oven. Two cans of dark red kidney beans, two cans of light red kidney beans, can of black beans, can of corn for color, two cans of rotel and seasoned with chili powder until color looked right then added cayenne to add a little heat. Cooked indirect at 275 until meat hit 150 IT. Chopped it all up and added to dutch oven to let simmer together. While it was simmering, put a iron skillet full of cornbread on top to cook.

    It ate just fine.

    Make sure you use the chipotle rotel... Makes it so much better.
