    Default Ribeye cap steak?

    I always buy a couple of whole ribeyes before Christmas. Usually cut one into steaks and cut the other in half and do a couple of prime rib roasts in the Big Easy. Thinking of separating the cap off of one this year and rolling up the cap into steaks. Y'all ever do this?

    Deckle is good. I wouldn't bother rolling it up. Just sear it to mid rare and slice thin.

    Absolutely....the only time I ever leave Costco without some of them is if they don't have them in the case.
