I was thinking 15lb braid for the Medium with 20lb flouro leader, then 20lb braid on the second with 20lb leader ? Or do I just leave them both 15lb and call it a day.
You need 1 more- 6' med hvy 12-20 with a soft tip for accurate skip casting under docks- most average height people can't do it with anything longer than a 6' rod

    12 or 15lb braid on the 3000, 20lb on the 4000

Match your leader to you bait and where you are fishing.

What would change if I put 20lb on the 3000 ? I get that its 5;b stronger but will it effect casting or is that i just don't need it?
I have a ton left from restringing my catfish rods last month.

If you have the 15 already just use that.
Main reason I bump to 20 on my 4000 is that they are primarily my dock fishing rods and I need to be able to winch a decent fish out if necessary.

No I meant that the other way around. I have a few hundred yards of 20lb left over. Is 20lbtoo much for the 8-15lb rod w/3000 reel ?
