There’s a secret ingredient Fish won’t tell you. It’s asshole. It’s like love, except instead of adding warmth and comfort to the dish, it gives it a punch you in the mouth feeling.
I've got a chicken casserole recipe to share with you boys. I make this about once a week and frickin sparks fly at the kitchen table when I set it out.
I make this in a baking dish, maybe 10" wide x 18" long X 3" deep
8 cans of chicken breast with rib meat
1 family size can cream of chicken
1 pint of sour cream
2 sleeves of "everything" Ritz crackers
1/2 stick of butter
Open the chicken and squeeze ALL the water out of the chicken. This is both the most important and aggravating part of the process.
Mix the soup and sour cream in a bowl.
Heat the butter in a sautee pan until its melted.
Spread the chicken out in the baking dish.
Cover the chicken with the soup/sour cream and add salt.
Crunch up the crackers inside the paper tubes and mix into the melted butter.
Spread the crackers out onto the soup/sour cream.
Bake at 350 degrees for 30 minutes.
My wife makes this. Mixes in poppy seeds and calls it poppyseed chicken
Edited to add - I went back and found the shrimp toast recipe.
Jane's Cajun Shrimp Toast Appetizer
Ingredients
Measure these anyway you'd like. The amounts listed below are nothing more than a suggestion. Shape it to meet your own tastes.
2 loaves of French Bread - you can use any type of bread here
1 pound of fresh peeled South Carolina shrimp
Dukes mayonnaise
shredded mozzarella cheese
scallions
Course chop the shrimp
Saute the scallions in a pinch of butter. Salt and pepper. Once they're working, add the shrimp and saute them until they pink up and then get them off the heat.
Mix 2 cups of Dukes mayonnaise with 2 cups of cheese.
Cut the bread long ways like a sub roll.
Take the sauteed shrimp and spread it out on the bread.
Take the Dukes mayonnaise/cheese mixture and spread it the best you can on top of the shrimp.
Salt and pepper
Put it all in the oven at 400 degrees until the cheese mix starts to bubble.
Once the goo is bubbling, turn on the broiler and WATCH IT until the topping starts to get nice'n brown.
