    Default Meat and beans and meat and peas

    After making a pot of Lima’s tonight I was talking with a friend and he has discrepancies with my philosophy for meats in beans.
    I look at it like this:
    Bacon is for navy and green beans
    Ham is for butter beans or pintos
    And fatback is for Lima’s and most any others.



    white acre peas = fatback
    Black eyed peas= bacon
    Field peas =bacon
    Leseaurs Little green peas=cheese!

    What y’all think? What were y’all raised on?

    To tell the truth, I use Goya ham seasoning in beans/peas most often. For big meals like Thanksgiving, Christmas, or any big cook, I'll get a hamhock or fatback. If yall haven't tried the Goya stuff, I suggest that you do. It's easy and it tastes like you used real pork for seasoning.

    My Grandma cooked collards today and saved me the fatback that she fried for the seasoning grease.

    Praise God for Grandmas and fatback

    Very true
    Luckily my wife has two grandmas that are still here and she has learned from them and one wrote her a recipe book

    Ham hocks or Fatback and I prefer little red field peas with snaps above all else. My wife is old school and knows how to cook.

    Smoked pig's tails. All that fine pig flavor ends up at the south end of the pig is the way it was explained to me.

    My woman uses that Goya stuff..... cuz she's a woman. ( Which is why I do most of the cooking).

    I use Camellia brand beans when I can find them. ( or order them online) There is a difference IMHO.

    My lady can cook. I mean it's edible. But the heavy lifting and scratch stuff comes from me rattling pans.

    same here. I cook Thanksgiving and Christmas Dinner at my house. I started cooking Christmas dinner with my mom years ago. I think its her favorite part of the holidays. My 11 year old has started helping us lately.

    Wife can cook some things, like roasts, lasagna and casseroles.

    But I will tell you, Venison cube steak with onions and gravy got me in her britches the first time. That is her Birthday meal ever since.
