    Off the freaking chart!

    Threw it together before hunting yesterday evening, came back and dug out a bowl. All I have eaten for the last four meals. Great lawt chile, no wonder the Swamp Fox was able to keep on kickn arse.

    Wild hog sausage ground, add a little fat from same critter and Italian spices to suit. I used 3 cups of Sausage.

    Deer heart cleaned well, cut off top of heart containing artery exit and vein entrance, cube heart into 1/2 inch chunks, lightly marinate for a couple hours in Dales low sodium marinade.

    1/4 stick of butter in the skillet, teaspoon garlic powder, couple pinches of black pepper, teaspoon of Cavenders then toss in the sausage and heart brown till done, bring down to simmer and add 1/2 cup of 1/2 and 1/2 cream stir around to get all mixed up while simmering, not long.

    Jefferson Scarlet takes a while to cook, I used two cups of it and 4 cups water add 1/4 stick of butter. Bring water to boil, add butter then add rice, boil hard for 3 minutes, let simmer for 30 minutes , add water as needed.

    Then mix it all together, be sure to get all the drippings from the skillet in there as well and there ya have it. De freakn lich us !

    Nope , I didn't even think to take a picture, just looks like a red perlot with chunks of brown meat.

    From a buddy of mine that is growing vintage strains here in the Lowcountry area. Wetlands establishment and I believe Geechie boy mills may carry it as well. Beats the bejeebus out of the on the shelf offerings.
