AR hunting rigs are a bit of a addiction. I started with a 300 blackout 16 inch carbine, inside 200 yards I run a hornady 110 grain bullet and it has cleanly killed a number of times. I next built a .50 beowulf because America, followed that with a 6.5 Grendel in and 18 inch configureation and lastly build a .458 Socom and 300 pistol j10.5 barrel to make the can workable. Without fail i nearly always grab the 6.5 Grendel. I really like that round and the recoil and accuracy. Your milage may very, but if i was to only build one, the 6.5 Grendel would be it. IMO AR10's are just way to stupid heavy to carry, even in a 16 inch stalker carbine configuration.
