Default Wrap ducks or ZipLoc in water?

I wrap all my deer meat in freezer paper. I've always put my duck breasts in a ZipLock and water with no air and frozen. After shooting some sandhill cranes, I got to wondering why I've been storing my ducks this way. There seems to be no reason not to store ducks and these crane breasts like I do my deer and just wrap a good eating quantity in freezer-paper. Curious to know how y'all store your ducks in the freezer and if anyone, indeed, uses waxed freezer paper. Thanks.

I trust water more than I do vacuum sealing.

I vac seal about eveything including whole plucked birds but the slightest pinhole will ruin a bird quick. Most leaks come from moving frozen stuff around while digging in the freezer. Milk crates help in a chest freezer, but ill never buy another chest freezer.

It's happened to me a few times. I've got a food saver sitting in the closet, but if or when I kill a mess of birds I use the water and sink closing method mostly these days.
