I've never eaten a soft shell but I caught a small on fishing one time and it had little skinny legs. I wouldn't think they would have much meat on them.

They say there's seven different types of meat on a snapper. Dunno but I've fried the backstrap and the legs. Legs have the most flavor, backstrap is almost bland. I just try some nuggets up while fixin the rest for the stewpot.

Just to clarify, you didn't rise to the top of any food chain to begin with.

God gave you dominion over all animals way back when Noah stepped off the ark some 1600 years into earth's existence and it included reptiles. Genesis 9:2-3

I'm pretty sure I'd rather try turtle than ever eat Canada goose again. I carefully brined, seasoned and smoked a goose breast and not only could I not stomach it, my dogs wouldn't eat it either.
