    Got me a 12.5 pounder going on here in a little bit. I am using a new Maverick thermometer I am excited to test out.

    Cooker got hot when I wrapped it in butcher paper. Gonna bring the temp back down and let it finish that last 20 degrees. It’s been going for almost 9 hours at this point.

    First cook with it but I am pleased. It comes with 4 probes, two for meat, and two for the cooker. You can adjust the alarms and temperatures for each one separately. I had a Bluetooth Maverick in the past that linked to my phone but the signal sucked. Sleeping on the couch for an overnight cook is overrated.

    This one never lost signal the entire night. Very happy so far.

    Do him a favor and show him how to smoke pork. Then teach him how to buy a proper cut of beef and sear it to a perfect medium rare

    Will be waiting to see the final results of the cook. Also, that's a mighty nice thermometer you have. Maverick has always made some pretty solid stuff. I also wouldn't sweat the temp fluctuation a whole lot next time unless you are just shooting for a specific time to finish. The difference is minimal as far as the meat is concerned when talking about cooking at 275 or less.

    Lump gives inconsistent temps compared to briquettes. Different sizes and shapes.

    Science and Shit. My cooker has been going like an oven for 14.5 hours now on one load of briquettes. It’s “fire”
