Whetstone for good kitchen and butcher knives. Worksharp diamond plates for everything else.

Digging my Shuns though, have yet to even need a touchup.

Worksharp. Hands down the best thing on the market.

Coming back to thins to see what you guys use for your kitchen knives. I have read some negative stuff about using the worksharp for them. I use one for my pocket and filet knives.

I bought a set of DMT stones about 2 months ago, and I like them. Much better quality than cheaper stones/hones I’ve had before. My current daily carry knife is D2 steel and it touches it up very nicely

I use a stone to dull them then, once I admit defeat, I use a Worksharp to actually sharpen the blade.

Once you learn how to use the compound impregnated strop, it will sharpen up an edge like nobody's business as long as any nicks/dings are taken out beforehand.

It is like you were watching me sharpening scissors yesterday.

For knives I use one of these...

Harbor Freight sells that one for $12,

One thing I like is that it is pretty aggressive in case I need to do work on a rough blade

This is what I use too. Easy and gets them as sharp as I'll ever need a knife to be.

I have some impregnated steel plates like the block that JABIII posted but I finish them on some ceramic crock sticks I got as a high school graduation gift. I have many, many different sharpening stones, some made of rock and some composite. Every man in my family carries a knife every time they put on their pants and they know how to sharpen them. It was just normal where I grew up. We all had a fetish for knives, guns, good flashlights and optics.

    Which one? There's a $45 model and a $129 model on Amazon.
