    Default King Mackerel recipes

Parents brought a bunch home from the Nuts and Bolts fishing tournament last week in Florida. Dad wants to do some up for fathers day supper tonight. Anybody have a recipe they prefer over salt and pepper and lemon juice? Will also be cooking up some trout they caught as well.

If they froze it, throw it in the trash. If it’s a week old and unfrozen get a cat and feed it to it or throw it in the trash.
Yeah, but do you consider a dog to be a filthy animal? I wouldn't go so far as to call a dog filthy but they're definitely dirty. But, a dog's got personality. Personality goes a long way.

If fairly fresh and small ones, grill with butter and crushed garlic

Steak it, soak overnight in vinegar based bbq sauce. Place in tinfoil with slice of Vidalia onion and wrap in bacon. Cook over charcoal.

Except for the fact that people will eat Wahoo... Kings, not as popular.

Only time I ate Kingfish and enjoyed it involved beer. Lots of beer.

I haven’t tried it yet but a friend of mine says he smokes it and it is really good. He also makes some type of dip with the smoked mackerel. He also said it wasn’t fit for a cat before he tried this.

I did the following this morning and just finished making it into a dip. Pretty pleased with the outcome

Brine for 4-8 hours with the following:
    1/2 cup salt
    1/2 cup rum
    1/2 cup sugar
    1/2 cup brown sugar
    2 bay leaves crushed
    1 QT of water

Pull from the brine, rinse, pat dry and let sit at room temp for an hour. Smoked on a cedar plank at 175-200 on the egg for 4 hours with apple and cherry wood.

Mix up with some diced onions/celery, dukes, cream cheese, sour cream, Lipton onion mix, garlic, salt, pepper and hot sauce and you've got a good fish dip.

They only eat wahoo for the name and it’s cool! Lol seriously king is a little more fishy, but taste pretty close to a wahoo. My buddy could cook them side by side and you wouldn’t tell the difference

I've eaten a mess of kings, basically only day of though. Anything over a couple days I'd make a dip out of it. I'm not fond of any frozen fish, some flash frozen wild s*** can be okay. Even if or when I freeze dolphin, I'm going to nugget and fry it. If not, it'll be turned into a dip. Fish talked about frying some and tossing them into wing sauce before.. that wouldn't be a terrible idea.

Most any fish smoked and made into dip is edible. Even Marlin.

JMO, I have eaten plenty of Wahoo and it's good. Especially in Hawaii. Those Wahoo are really good. Kingfish just doesn't excite me.
