    One of our favorites from Leah's kitchen

    White Beans and Shrimp
    Ingredients:
    • 2 pounds Camellia Brand Great Northern Beans
    • 4 cups onion, chopped
    • 2 cups celery, chopped
    • 2 cups bell peppers, chopped
    • 1/2 cup parsley, chopped
    • 3 - 4 cloves garlic, chopped
    • 1 tablespoon thyme
    • Black pepper, to taste
    • Dash cayenne pepper
    • Dash white pepper
    • Salt, to taste
    • Chicken stock or water, enough to cover beans
    • 1 1/2 pounds shrimp, peeled and deveined
    • 4 cups heavy cream
    • Steamed white rice
    Yield:
    10 - 12
    Directions:
    1. Soak beans, in enough water to cover, in the refrigerator overnight.
    2. Drain beans.
    3. In a large pot, combine beans, veggies, seasoning, and stock or water.
    4. Simmer covered for 2 - 3 hours until beans are tender.
    5. Add shrimp and cream and simmer until shrimp are cooked. Approximately 5 minutes.
    6. Serve over white rice.

    Hmmm... Now that's one I haven't tried and I grew up down that way. Just mentioned to the wife we need to do something with the shrimp in the freezer. Will have to figure a substitute for the heavy cream, though.

    She also made the most incredible Ham and Lima beans I have ever eaten.. didn't get the recipe for that , although I suspect the ham came from Mother's (or whoever sells them to Mother's)..

    why dont you just substitute your man card?

    there is no subsititute for heavy cream!

    Uhhh, hey there Mr. Fluoride ... The wife has a pretty good case of lactose intolerance. Heavy cream sends her over the edge every time. We'll probably have to use whole goat milk and if I can get away with a little half and half, we'll be in good shape. Otherwise, I'll have to wait until she's out of town And as always, I can see a finely crafted tiger-maple spoon being key to success with this recipe.
