I'm more curious as to what he took out before he took the picture. I bet there was some liquid smoke in there not shown in the picture...

I loathe truffle oil... I keep it in there as a reminder of how far away people can go from good taste. I mean, I like truffles, but I abhor the oil.. I was at a point if someone put it on another french fry in front of me I was going to lose it.

A couple days into this now and I nailed the Brazilian and Ethiopian roasts. My first batch of Ugandan and Mexican blend I roasted too dark.

I roasted a new batch of Ugandan yesterday that has to sit a few days. They say a minimum of 24 hours but 3 days seems to be the common recommendation to let it sit.

First time I went to Coast they had a grouper special that intrigued me. It had truffle oil, and never having tasted it, but know how a lot of the white tablecloth joints use it, I assumed it was good. Worst dish ever. Completely ruined it. I was most sad for the poor grouper that was associated with it.

This strikes me the same as reloading shotgun shells. I'm not a tinkerer or a gadget guy. I've got better stuff to do with my time. But I hope ya'll have a lot of fun with it.
