    Default Tree rats

    Braised with root vegetables. Made a Cauliflower mash and sauteed some greens. A turd it will make.

    Do you do anything to tenderize the squirrels first, like parboil or pressure cook them?

    Soaked in salted water for a bit. After that I dried the pieces off and seared them in a skillet.

    May want to look up what braising means. I'm sure it was wonderful.

    After I seared the meat I pulled it out and set it to the side I then added carrots parsnips and sweet potatoes. Two that I added some diced onion and celery and let that go a bit. Then I added 2 cloves of minced garlic some tomato paste. After a few minutes I added vegetable stock and some red wine, a few bay leaves and some thyme and returned the meat to the pot. I covered the pot and let it simmer for two hours. Meat was very tender rabbitman.

    Hahaha. Depending on the area, sand can be very beneficial to your diet.
