I want to get into smoking meats. I want a pretty low maintenance, low stress smoker. Think crock pot. Pellet grills have my eye. Any suggestions or one to stay away from. Trying to stay below 500 doll hairs.

WSM is a good choice and is pretty low stress after you use it a few times. That said, pellet smokers are about as easy as it comes. No setup and pretty foolproof.
There is a website called amazingribs.com or something like that that grades the smokers and grills. I saw one on there that was gas powered and had a thermostat to regulate temp. They slammed a lot of electric smokers. Take a look.
It's not enough to simply tolerate the 2nd Amendment as an antiquated inconvenience. Caring for the 2nd Amendment means fighting to restore long lost rights.

Love my Masterbuilt electric smoker as well. Just did a turkey today on it for the family. They are inexpensive, easy to use, and make some great tasting food!
Living in Moncks Corner but looking forward to moving back to the West Coast in 2020 where there are more ducks and less duck hunters!! LOL
I had a pellet smoker and loved it. It was a treager knockocd that was built by treager. It was free so that was a bonus. I loves it and then hated it. One piece of advise I would give is use only treager pellets and don't allow any unused pellets to stay in the hopper/auger. It Cooks with very little effort. However it doesn't hold a candle to real wood/coal. If you want to do it right spend some money and get a real smoker, offset or a reverse flow. Get one that you could use to cook for a family or small crowd. Mine is way to big to cook a rack or two for myself but I got mine for commercial use. I'm always looking at them online. If I find a deal I send it your way.
WSM is easy and seems to hold heat well.

Build an ugly drum if easy real smoke is what your looking for. Will cost you a hundred bucks and a few hours. I can keep a steady temp on half a bag of charcoal and wood chips for twelve hours easy.

I am about to list an Oklahoma Joe in the trading post as soon as I get time to take pics.
It is very nice and a larger offset with firebox. Highly recommend them if you want a traditional smoker
The whole key is what you smoke with. I use old pecan, hickory and blackjack oak that is dry and some as old as 30/yrs. White oak mixed in a bind. Get you a barrel grill and go. Bout 100-150 will cook just as good as a 1200 unless you cooking for a lot of people. Trust Me.
