    Just dayum..... Went with a basic oil and lemon juice on the arugula.
    Otherwise pretty much followed this plan....

    Looks like the goat wasn’t very popular. How long of a sear? 15 seconds? Nvm, just saw the link. Yours looks way better.

    I was going to do a chicken and pork liver pâté for a Thanksgiving app, but I may go with this instead. If I’m feeling good, maybe both.

    The presentation looks so good. I like a rare tenderloin. I don't know if I could go that rare, though. I think it is just a mental thing.

    After you chill it down it takes on a whole new texture and mild flavor.... Truly, you need to give it a try.
    I'm typically a med rare beef kinda guy but this was for all practical purposes totally rare and uncooked!
