    Default Evolution of a backstrap....

I own a lot of cast iron including several heirloom pieces belonging to my Grandmother.
Nothing puts this hard sear on a loin like this Blackstone.....
Couple pieces of bacon..... S&P and nice sear.
    The kids can't get enough!

Nice Scott, I like deer. I like it even more when it's not overcooked and wrapped in bacon.

Looks good. How long did you age it?

If your question is directed towards me it has been hanging in the cooler for about 2 weeks.

It was more of a funny aimed at toofer. And it definitely looks good. Most of what we kill hangs 2 - 3 weeks.
