    I've only used one of those once. I feel like it doesn't let my ability shine. However if I was cooking over open flames, I dern sure would, a stick up the fishes interior would be number two, third option.. maybe second depending on fish would be the hobo method.

    This. Need to burn the VOCs of a new batch of lump when you fire up the egg. I usually put a full load in, up to the top of the fire ring, that way when I light it up for the next cook, the prep time for the lump is a lot quicker as the VOCs are already burnt off.

    Stainless grill strictly for fish .... Bull or Wolf or something that doesn’t go away in the salt

    You can switch out the charcoal, add different accessories, put down a cast iron skillet, or cook it over an open flame, it still takes like Smokey fish.... brah
