    Yes it's good. They got the recipe when Lancaster Frozen Foods went out of business from what I understand. It's my favorite breakfast sausage. Neeses is a close second.

    Yep, the guy who turned me onto it called it Lancaster sausage. It's been a long time but it tastes about just like what my uncle used to make when they'd kill hogs and sell it out of his store.

    Fat content looks good. Folks have started using too little fat and that, imho, sucks.

    That's key. And the secret to good venison sausage is to add enough pork sausage so the deer meat won't dry out. 9:1 seems about right.
