    Looks great! Only suggested improvement would be to try wrapping in butcher paper vs aluminum foil. Seems to help with the bark, at least in my experience.

    Correct, I usually do and thought I had a partial roll of red paper but didn't.
    Paper lets the meat bake more as it can breathe vs aluminum foil being too tight and the meat steams.

    Where do you get the butcher paper? I'm sure Amazon can come through. Just wasn't sure if this was something you can find locally.

    Most Costco and Sam's carry it (look around the freezer stuff) but its a pretty big roll. You may be better off going to your local
    butcher shop and asking him to sell you a few feet. They usually will when you tell them what you are doing with it

    They would probably appreciate you buying the brisket from them as well.
