    All this recent rain has the chanterelles jumping at my club. Sumter county. Grandson and I picked a bunch this morning and there were a bunch more that need another couple of days

    Holes in the caps are from bugs. Ants eat them up pretty good as do small worms and stuff. I've eaten plenty that have a few holes and it's fine as long as they aren't destroyed. If they're all torn up and brown inside the stem then I'd leave it. Probably won't hurt you but it also probably won't taste as good as prime ones.

    When you split them open, the inside of the stem should be solid white.

    As for lasting after they grow to harvest size, I've seen them go 2 weeks as long as we are getting some rain during that time. If not, they'll be dried up and nasty looking a week after hitting their prime.
