    Default Best Speck breast recipes?

    Can i get some good recipes?Ive never tried speck or any kind of goose before.Please and many thanks.

    It’s a great piece of meat. No need to do anything but season and throw on a hot grill. Don’t cook past Med Rare.

    Steelin,why not?I hear specks eat good,but honkers are greasy.

    Marinate in olive oil, S&P, and garlic. Grill over high heat to mid rare. Slice and Serve with a horseradish sauce. Best game bird on the planet.

    Course salt, sprinkled liberally. Throw on hot grill. Cook no more than medium rare. Pull off and add cracked pepper. Slice into medallions. Serve with blue cheese grits and asparagus.

    If you have a bunch of them and want something different. Cook the same way. But put in a warm tortilla with pepper jack cheese, grilled onions and peppers, some avacado slices, and a spoonful of smoked tomatillos sauce.

    I too have heard dumb rednecks say they're "greasy". Honkers are just like a mallard if you'll slow roasted them.
