WILD DUCK TURNOVERS

INGREDIENTS:
Boneless breast meat from one Mallard-sized duck
1 Teaspoon lemon juice
4 Medium sized fresh mushrooms, diced fine
Olive oil to brown meat & sauté vegetables & fruit
1 Clove Garlic, diced fine
1 Can of Pillsbury Cherry or Apple Turnover Dough-
-Use included Icing & fruit filling for something else
1 Tablespoon Onion, diced fine
2 Tablespoons Dried Currants, diced fine
Salt and Pepper vegetables and meat to taste
DIRECTIONS: Dice all vegetables and fruit quite finely. Sauté thouroughly in small amount of olive oil, cook well, but don't brown. Slice duck breast meat very thinly, then again lengthwise and cut, to end up with about 1/4" cubes. Place the meat in a skillet with a small amount of olive oil. Salt and pepper the meat and squeeze about a teaspoon of lemon juice on meat and mix well. Place skillett on burner on high heat, and stir almost constantly. Pull as soon as moisture has evaporated. By then meat will be cooked. Mix cooked meat with the sauteed vegetables and fruit. Spoon mix into middle of a turnover square, fold and seal edges with a fork. Place on lightly oiled cookie sheet. Place in oven preheated to 400 degrees. Cook until golden brown on top- about 9 minutes. There are 6 turnover squares in the package and this amount of meat/veg/fruit mix will just fill them. Two hearty eaters would want more.
