    anyone have any good hushpuppy recipes to serve ata fish fry. I know you can buy the mix. I want to learn to make my own mix in the kitchen from scratch. I think they are the best for you.

    Put whole kernal corn and/or onion in it.

    Southern Hushpuppies
    Recipe makes 3-½ dozen


    2 cups self-rising cornmeal
    1-cup self-rising flour
    ½ teaspoon salt
    3 tablespoons sugar
    3 large eggs, lightly beaten
    ½ cup milk
    1-½ cups shredded cheddar cheese
    2 jalapeno peppers, seeded and chopped
    1 (17 ounce) can cream-style corn
    1 large onion, chopped
    Vegetable oil (for frying)

    Combine first 4 ingredients in a large bowl.

    Combine eggs and milk; add to dry ingredients, stirring just until moistened.

    Stir in cheese, pepper, corn, and onion. Do not over stir.

    Pour oil to depth of 2 inches into a small Dutch oven. Heat to 375°. Carefully drop batter by rounded tablespoons into oil.

    Fry hushpuppies a few at a time 3 minutes or until golden brown, turning once.

    Drain on paper towels.

    for a little different add some sprite soft drink
    be carefull the sugar will carmelize if the oil is too hot

    Question for you hushpuppy gurus...

    Can you fry your pups first and then do the fish in the same oil or would it leave a bad after taste?

    Or for that matter, have any of you done the fish first and then the pups in the same oil?

    first, yes there will be an imparted flavor if you cook the fish and then the hudhpuppies.
    second, depending on the fish the flavor in the hushpuppies can be mild to wild !! (i.e. flounder mild popeye mullet wild)

    how to over come the problem
    don't scorch your oil while frying the fish ( too high heat)
    after fryinf the fish allow the oil to cool, then add fresh cut irsh potatoes (I like to ue small potatoes cut into shoestring style). Place the potatoes in the cool oil and bring the heat up to frying temp and allow the fries to get crisp and brown.
    try it, you will like it !!!
