From a friend. I Haven't tried this myself yet. Heard from others that it's good.
Dirty Rice n' Diver
1/2 - 1 onion, diced.
1Lb ground pork.
1Lb of duck meat, diced 1/4 inch.
1-2 Tbsp of Cajun seasoning or Jamaican Jerk.
1-2 Tbsp of Worcestershire Sauce.
4 Cups of chicken broth.
2 Cups of Long Grain rice (or Uncle Ben's Converted)
2-3 Tbsp of Olive Oil.
1 Cup of corn (optional).
Get a large pot with a tight fitting lid going over medium heat. To that add oil, onions, pork and duck. For the duck, I use the stuff that has been shot a little too close or those funny looking ducks that sit deep in the water and run when they take off. You know... divers
Turn the heat up to medium high and simmer, stirring occasionally until all the meat is cooked and most of the moisture is gone. Break up the pieces of ground pork with a wooden spoon as you stir the ingredients.
Now add the Cajun seasoning or Jerk (I prefer Jerk) and stir into the meat and onions until well distributed, then add the broth and Worcestershire sauce, as well as the corn if you opted to do so (frozen works fine) and give it an occasional stir while you bring it back to a brisk simmer.
Now add the rice and stir together briefly. Reduce the heat to medium and bring back to a simmer. Cover tightly, reduce the heat to medium low and cook for twenty minutes. I like to place some pot holders on top of the lid as insulation.
After twenty minutes, turn the heat off, but do NOT lift the lid for at least 10 more minutes!
OK... Now you can lift the lid, salt to taste and give everything one last stir before serving.
