    New cast iron is good but it is < old cast iron.

    Has anyone smoothed out new iron? Ground it smooth and reseasoned it?

    I, too, have a cast iron skillet that has never been used to cook anything but cornbread. Think I'll make some tomorrow. Our family cornbread recipe is the best in the world.

    Oh thats bacon grease from a hog we butchered last winter. Notice one of them eggs has a double.

    I'm not sure about replacing anything. I keep one non stick pan around, simply because it's easy. I'm going to fuck it up. I know this, then I'll throw it away and buy a new one. I mostly cook on metal, or copper pans. I've got some cast iron, I use it from time to time, they hold heat. I like that. I couldn't see replacing all of my stuff with it, not with the intent on being more country.

    I've got a big ass ceramic, iron thing that's going to be used with a mess of short ribs a bit later today.

    It pains me to think where all my great grandmothers cast iorn got off too. She had a collection that would make most of you drool. I remember as a kid she had a pantry wall where all of them hung or had a spot on a shelf. I was ton young to know how neat it all was. I have managed to find a few of them here and there. I'll try and post a few pics. I need to season most of them.

    Mine is not allowed to use mine. Tomatoes and onions striped mine because she left it for me to clean when I got home. Bottom of that pan was smooth as silk. Not anymore. May be in another 20 years or so. I now store them on top of the cabinets so she will leave them alone. Bought her some enameled lodge for her use. It really does 13 bean soup in the oven great.

    I fried three packs of cube steak last night in a deep cast iron pan last night. Fellows couldn't get enough.

    I have a bunch. Some old some new. Frying pans of various sizes, Dutch ovens, skillet, grandma's cornbread pan shaped like corn, and some of those ceramic-coated pots. I cook just about everyone in them. My wife does sometimes, but she doesn't have the patience normally. That's ok too. I'll try to post some photos when I cook something weird next time.
